Villa Betulia Papayo is the latest in Corvus’ exotic lineup. Papayo is a relatively new and currently rare varietal that gets its name for its distinctly papaya-shaped cherries. It is easy to grow, is resistant to disease, has high production, and the fruit has lots of pulp making it a great candidate for experimental fermentations. This coffee for example went through a washed anaerobic processing. It was an exciting coffee with a dynamic profile.

The coffee began with a floral fragrance with notes of stone fruit and some subtle booziness. The flavor reminded me of roses, berries, apricot, and port wine. It was a robust, unique combination that had a lot of depth and complexity to it. The coffee had a lush, full mouthfeel and a jammy sweetness with a mix of fruit and floral notes. The finish was structured and reminded me of port wine. The coffee was great as a pour over and makes an exciting espresso. My favorite brew method though was actually a Japanese Iced Coffee where the dynamic nature of the coffee really shined.

The Bottom Line

Overall while there was a lot going on in the cup, there was a great balance of attributes and flavors. It was a very fun coffee and deserved its place in the exotic lineup.
