Santa Maria is the Peruvian farm of Cesar Sampertegui and where this coffee was grown. The processing for the coffee is an anaerobic process, which adds a wonderful layer of complexity to the coffee on top of the balanced and approachable cup you tend to expect from Peru. This coffee is part of Corvus’ exotic series, which are coffees that score 88 or higher and have an extra level of interest based on variety, processing or origin.
The coffee began with a sweet and subtly floral fragrance that reminded me of chocolate and orange marmalade. The coffee had a wonderful juicy acidity that builds along with the sweetness as the coffee cools. The flavor was floral, chocolate, orange and subtle tropical fruit all mixed together with an orange blossom and chocolate sweetness that crescendoed into the finish. The mouthfeel was smooth and silky with a nice thick body.
The Bottom Line
I loved how Santa Maria took what could have been a fairly basic Peruvian coffee and layered complexity on it with the unique floral & sweet profile. It did a great job maintaining its approachable profile while being complex and unique.
