La Bandida is from Corvus’ exotic series and features a Pink Bourbon variety. Producer Andres Guacas used yeast inoculated anaerobic fermentation to create an incredibly unique and delicious coffee.
The coffee begins with a sweet & rich fragrance that reminded me of chocolate, boozy dark fruit, and black cherry. The flavor profile was sweet & lively with notes of rich chocolate, raspberry, cherry, and citrus. The body was lighter, but with a silky mouthfeel. The rich sweetness reminded me of chocolate-covered cherries and lingers into the finish. Overall the depth of flavor and the evolution that occurred as the coffee cooled was incredible.
The Bottom Line
La Bandida was a rich & lively coffee that was a lot of fun to explore. Its complex profile was a treat to come back to with every brew.
