This Colombian Marta Rubi comes from producers Elias and Shady Bayter and their farm, El Vergel. I am always a huge fan of the coffees the Bayter brothers put out and this one is no exception. This coffee comes from a micro-lot of 5,500 trees that is picked and harvested specifically by women as part of the El Vergel Woman Project.

This lot spent 60 hours in anaerobic fermentation and then was intermittently dried for 35 days on raised beds before further processing. The result is a punchy & fruit-forward coffee that is a lot of fun to drink.

The coffee begins immediately with its bold attributes featuring a strong fruit-forward fragrance. During brewing, the sweet aromatics enhance the experience and lead into a dynamic flavor profile full of dark red fruits, supporting tropical fruit notes and underlying chocolate notes. It has a heavy, silky body with a big mouthfeel that pairs with an intense fruit-forward sweetness. The malic acidity at the start mellows out throughout the sip and lingers into a long, sweet finish.

Anaerobic coffees like this can get a bit astringent if over-extracted, so I kept my brews fairly basic with little agitation. Doing so has led to complex brews where the layered fruit notes come out and the profile evolves beautifully as the coffee cools.

The Bottom Line

Brew X Coffee did a great job bringing out the best of this bold and punchy coffee. It’s a fun and dynamic cup that is exciting to enjoy with every brew.
