Oak & Bond Coffee has been a long-time favorite roaster of mine, so I was excited to see when they added their first anaerobically processed coffee to their collection a few months back. In the last year or two the anaerobically processed coffees I have tried have been incredibly diverse and wild. I was excited to see Oak & Bond’s take on one and see how it compared to others I have tried in the past.

Colombia Manos Juntas began with a strong fragrance that was rich and decadent and reminded me of chocolate, graham cracker and marshmallows—yes, a s’more. The flavor took a bit of a fruit twist. It was juicy and sweet with some subtle tartness and had flavor notes that reminded me of cranberry, dark berries and chocolate. As the coffee cooled, the sweet tart, fruit-toned sweetness grew. The acidity was strong throughout and the mouthfeel was velvety and decadent. The finish featured lingering sweetness.

The Bottom Line

As with almost every anaerobically processed coffee I’ve tried, this one was quite unique. Its sweet tart profile paired with its silky mouthfeel was a unique combination I really enjoyed. The complexity found in the multiple layers of flavors and the evolution of the sweetness throughout the sip made this a fun coffee to drink time and time again.
