This coffee from Rogue Wave Coffee was produced by Wilton Benitez. Benitez has 16+ years of experience with specialty coffee, is a roaster, and is a Q-grader processor. This coffee featured a 40-hour anaerobic fermentation but didn’t have the harsh notes that can sometimes come with these experimental coffees.

The coffee began with a vibrant fragrance full of fruit & citrus. The flavor featured notes of sweet citrus, lemon-lime, and subtle berries. As the coffee cooled, the sharp citrus gave way to more rounded fruit notes. The acidity was crisp and it had a medium body. The sweetness was candy-like and reminded me of lemon drops. The finish featured lingering citrus acidity and sweetness.

The Bottom Line

This coffee was very citrus/lemon-lime focused, but also had nice supporting attributes that made for a rounded and complex cup. It featured the intense sweetness and candy-like profile I’ve come to expect in an experimental coffee without pushing it so far to be off-putting.

Rogue Wave Coffee has a few other of Wilton Benitez’s coffees and I may have an opportunity to feature a very special one in the coffee club soon…stay tuned.
