This anaerobic natural coffee produced by Finca El Diviso in Colombia and roasted by Tony’s Coffee in Washington is one of my first experiences with the Papayo varietal. Papayo is a Bourbon-related variety recently identified and is the exclusive varietal at Finca El Diviso. In addition to being disease resistant, the Papayo varietal is highly aromatic. This Colombia Diviso was a treat to enjoy—and I’m not the only one to think so; it is a finalist for a 2023 Good Food Award.

After reading about the varietal, I had high hopes for the aromatics of the coffee and it did not disappoint. The fragrance was wonderfully sweet with notes of fig jam and dried apricots. As the water hit the grounds, the sweetness grew, and notes of strawberries wafted from the grounds. The flavor had a vivid profile and was full of dark berries, apricot, and figs. The mouthfeel was luscious with a heavy body and a boisterously sugary sweet profile supported by fruit notes. The acidity was balanced throughout the cup with a lingering sparkle through the sweet finish.

The Bottom Line

One of my first experiences with the Papayo variety in Colombia Diviso did not disappoint. The coffee was highly aromatic, wonderfully sweet, and overall had a sharp, complex profile with a rich depth to it.
