Red Rooster Coffee partnered with Yellow Rooster Importing to bring in three Colombian coffees featuring three different processing methods—Fruit Punch Washed, Red Honey and Full Natural—to create the Trust the Process set. Each coffee is unique, delicious and come together to create a wonderful look into the quality and diversity possible within Colombian specialty coffee. Each coffee was excellent, but this Full Natural was my favorite from the set. It was produced by Willington Ultengo and was processed by picking ripe Caturra and Colombia varietal cherries, then floated in water to select the densest and ripest cherries and dried on raised beds for 11-14 days and dry milled at 11% moisture. The result is a delicious coffee that is an excellent expression of the natural processing method.

The coffee’s flavor reminded me of pineapple, berries and apples. It was incredibly sweet and crisp with a fruit-forward, intense sweetness throughout. The flavor was preceded by a fragrance that was strong and full of tropical fruit sweetness. The body was light with a crisp mouthfeel and a strong, crisp acidity like biting into a honeycrisp apple. The finish lingered with tropical fruit sweetness; bringing the experience full circle by referencing the fragrance. The coffee was incredibly complex with layered and complex fruit notes throughout. I found it did best brewing at a slightly higher coffee to water ratio (1:15) and higher temp water (209°F or 98°C).

The Bottom Line

The entire Trust the Process set from Red Rooster and Yellow Rooster Importing consists of high quality coffees. Trying them side-by-side to compare the different processing methods and Colombian coffees was incredibly satisfying. If you enjoy exploring different coffees and digging into different coffee origins, this is a great set to try.
