I get to try some pretty crazy coffees through Pull & Pour, but this was the first time I’ve ever had a coffee that was fermented 200 hours. This Colombian coffee from the Corvus Exotic lineup was fermented 50 hours anaerobic, 70 hours aerobic, and 70 hours of fermentation mid drying. The result is a truly wild coffee with a big, bold profile.

The coffee begins with a sweet, slightly boozy fragrance that reminded me of cherry candy. The flavor was big & bold with more boozy cherry notes and undertones of grapefruit citrus. The coffee became a bit more approachable as it cools. The mouthfeel of the coffee was big, lush and was one of my favorite attributes of the coffee. The citrus-toned acidity was very bright & punchy and the sweetness was fruit-forward and pronounced throughout each sip.

The Bottom Line

Overall this was a very fun coffee to explore. It was wild and while it wouldn’t be a coffee for everyone, if you enjoy the various experimental coffees available, this would absolutely be one to try. Regardless, this one was definitely worthy of its place in the Exotic lineup from Corvus.
