Jamison Savage has become a legend in the specialty coffee industry for taking the beautiful geisha variety and pairing it with different techniques from wine processing to create some incredibly delicious and unique coffees. I’ve had a chance to try a few of his coffees over the past few years from different roasters and they have all been incredible. This Symbiosis processed geisha was part of Corvus’ July 2021 reserve launch (along with a Nirvana process) and was an absolute treat.
The coffee began with a raspberry-centered, fruit-forward fragrance. After brewing the aroma reminded me of lemon citrus and milk chocolate. The flavor was slightly delicate, but beautiful. I tasted notes of strawberry, stone fruit, berries & pear. The fruit-toned sweetness grew more and more pronounced as the coffee cooled. The coffee had a juicy body, but wasn’t too heavy. The sparkling, citrus-focused acidity was steady throughout and lingered into the sweet-toned finish.
The Bottom Line
This Savage Geisha was another wonderfully complex and delicious coffee. It was a lot of fun to enjoy and well-deserved as a feature in Corvus’ reserve series.
