La Palma Sidra was a coffee in the reserve lineup at Corvus Coffee earlier this year. The Corvus reserve coffees are always spectacular, unique, and complex. That was definitely true for this Colombian coffee.

The coffee began with a rich fragrance that reminded me of sweet red wine and a mixture of fresh fruit. The flavor certainly was punchy with notes of raspberry/blackberry, deep red wine, and bright tropical fruit supports. The coffee smoothed out as it cooled. The mouthfeel was lush, full, and almost velvety in nature; it did a nice job supporting the full flavor profile. The sweetness was fruit-toned but also had citrus tropical fruit supports. The finish lingered with rich sweetness and blood-orange acidity.

The Bottom Line

Overall this coffee was not only incredibly tasty, but it was also quite complex. There was a lot to unpack with it and I enjoyed brewing it with a lot of different brew methods to parse out different attributes of the cup. It was another shining example of the quality the reserve series from Corvus brings.
