Fausto Romo Sidra is a coffee from Ecuador from the Hong Kong roaster, the Cupping Room. I recently had the opportunity to try the coffee through my Yonder subscription. Trying a coffee grown in Ecuador, roasted in Hong Kong and drank in the United States is such a cool experience and really drives home the global nature of every coffee’s journey.

The coffee begins with a spiced black tea and pear fragrance, which was different from any coffee I’ve had recently. During brewing the aroma became even sweeter and evolved into apple crispness and pear flavor notes. It had a gentle, tart acidity, which reminded me of biting into a Fuji apple. The body was delicate and lively, but also silky and smooth. The coffee was well-balanced and very approachable. It was sweet-toned, but not over the top. The finish was crisp, sweet and lingered just a bit.

The coffee had a really nice evolution to it and the layering of flavors add some great complexity to the cup. It was incredibly flexible and worked well in a variety of pour over methods, as well as espresso and French Press.

The Bottom Line

Finding coffees that are both approachable and balanced, while still being complex and unique is difficult to do. Fausto Romo Sidra did a good job at accomplishing both of these and would appeal to a wide range of coffee drinkers as a result. Yonder Coffee and the Cupping Room delivered an excellent coffee for the January 2020 monthly subscription.
