There have been some crazy coffees coming out of Colombia recently with some really wild processing methods and flavor profiles. While those are fun to experiment with, I find myself more and more coming back to the classic profiles. This washed Colombian from Topeca was a perfect example of that more classic profile.

The coffee began with a rich, sweet fragrance of chocolate, brown sugar & baking spices. While the roast level is a light-medium roast, it drinks a bit darker than that with prominent notes of dark chocolate, baking spices, and black cherry. The sweetness is caramel-like with brown sugar notes throughout. The coffee has a full body and rich, heavy mouthfeel that I loved and really helped support the thicker flavor profile. As the coffee cooled the coffee became a bit creamier with lighter fruit notes coming to the surface.

The Bottom Line

This was a really lovely coffee to enjoy. It was very well balanced and approachable, while still having some nice complexity and evolution and a flavor profile that would appeal to a wide range of coffee lovers.
