I had an opportunity to try the Irish roaster, Bailies Coffee, last year with my Yonder subscription and was excited to have the chance to try them again. This coffee is an extremely rare variety I had never tried before. Trying new varieties, just like trying new origins, is a lot of fun and a great way to explore the different types of coffees available.

Upon opening the bag, the coffee began with a rich, chocolate and marshmallow fragrance and evolved into a sweet cherry smell after grinding the beans. In the flavor I tasted chocolate, fig, cherries and subtle baking spices. It was rich & full with a smooth mouthfeel. The acidity was fairly balanced and steady and the cup overall was exceptionally clean. The sweetness was one of my favorite attributes in the coffee. It was complex and rich and had a wonderful depth with elements that reminded me of caramel, chocolate, raw sugar with some floral undertones. The finish was smooth with lingering richness of body and sweetness left in your mouth after every sip.

The Bottom Line

My second experience with Bailies was a great one and I’m excited to try to find other Sudan Rume coffees out there to see how they compare to this one.
