Whiptail Coffee is a new roaster started by Bryan Warchol in Berkeley, California. Bryan heads up the Bay Area CoRoasters (CoRo) education and roasting department. He roasted for another roaster before going out on his own and from the samples I tried, it’s clear he has the experience to know what he is doing. I was impressed with all of the samples I tried from Whiptail, but it was this Colombian Gesha that really stood out to me.

The coffee began with a crisp & sweet fragrance that was full of citrus. The flavor was delicate, fruit-toned, and reminded me of tropical fruit and berries. The crisp, citrus acidity builds throughout the sip and the mouthfeel was sophisticated and structured. The fruit-toned sweetness was quite strong and pronounced, but also was delicately complex. The finish featured a sweet sparkle of acidity without any dryness.

The Bottom Line

The clean complexity is really what made this coffee shine in my mind. It had some depth and richness and featured the elegance of a clean, washed coffee I’ve missed with many overly processed coffees recently.
