Collective Coffee Roasters is a roaster based in Calgary, Canada. Trying international roasters is always a treat, so I was excited to get to recently try a few selections from Collective. This Colombian blend is a community lot comprised of coffee from several farms near the town of Chachaguí. Combining coffee in this way “allow[s] numerous smallholder farmers to participate in the specialty coffee premiums being paid to farmers in the area that [they] work with.”1
The coffee begins with a creamy fragrance of chocolate and caramel. The flavor has a caramel-apple sweetness with nutty notes and citrus undertones. The coffee is incredibly well balanced and clean with a medium-intensity acidity. The acidity is more muted at the front, but comes on strong through the aftertaste where it lingers a bit. The coffee worked well for both pour over and immersion brew methods. I always enjoy the clean and balanced result of a v60, but with this coffee the French Press created a really rich and full cup that was especially good.
The Bottom Line
Chachaguí is a quality Colombian coffee that is balanced and clean. It lacks a bit of complexity in its flavor, but was still delicious and a great South American coffee.
