With their funky packaging and special, limited release coffees, Cirque Coffee Roasters has quickly become an iconic brand among coffee enthusiasts since they began roasting in 2016. I recently had the opportunity to try their Wush Wush, Ethiopia, which is one of those coffees you feel privileged to get to try. Not only is the coffee an extremely rare variety, it also uses has an incredibly unique processing—120 hour anaerobic fermentation. Both of these led to one of the most unique coffees I’ve ever tried, as well as a depth of flavor rarely found in even the best coffees.
The coffee begins with an incredibly strong and deeply sweet fragrance of blueberry, banana and sweet cream. Those flavors carried through incredibly well through the flavor where I tasted banana cream, berry, stone fruit and clove. The coffee has an intense brightness from beginning to end with the acidity lingering for what felt like a minute after each sip. It has a creamy, but light body and a nice balance even with the vast amount of complexity. The sweetness of the coffee really stole the show though where the berry sweetness paired with the sweet cream created a really exciting combination.
The Bottom Line
This coffee is an extremely special treat. While the price tag is higher than your average single-origin coffee, its unique flavor and profile makes it 100% worth it.
