Red Rooster returned with their second year of the Trust the Process series. The series focuses on different processing methods and this year included two El Salvadorian coffees: an anaerobic natural from Finca Los 3 Pocitos and this naturally processed coffee from Finca La Bendicion II.

This naturally processed coffee began with a fruit-toned fragrance that was sweet and reminded me of dark fruit and berries. The flavor featured rich, fruit notes with prominent berry notes throughout. It had a sparkling acidity that reminded me of green apple, a full body, and a silky, smooth, and velvety mouthfeel. The rich, fruit-toned sweetness lingered into the finish, which reminded me of the aftertaste after a sip of nice red wine.

The Bottom Line

This naturally processed El Salvordian coffee was a worthy addition to this year’s Trust the Process series. It had a lovely complexity of fruit notes and a great depth and richness in the cup.
