After trying my first coffee from the country of Timor-Leste from the London roaster, Assembly a few months back, it has become my new favorite origin. It is an uncommon one though, so I was really excited to try another one when Modest Coffee shared their “The Collector” featuring a washed coffee from the Ducurai region of Timor-Leste.

The coffee begins with a rich, creamy and chocolate-filled fragrance. In the flavor I tasted notes of lemon-lime, dark chocolate and honeycrisp apple. There was burst of citrus acidity at the front of each sip, but it was strong throughout. The sweetness was crisp and full of citrus, but also slightly creamy. It was very balanced and had a lingering apple acidity in the aftertaste. Pour over is always my go-to brew method for a coffee like this, but The Collector translated to espresso really well and created a creamy shot with the citrus notes coming through nicely.

The Bottom Line

My second experience with a coffee from Timor Leste was confirmation that good coffee from the region is some of the best available and aligns with my flavor preferences perfectly.
