Pros
Fabula Coffee focuses on providing Fair Trade, organic coffee. They offer a variety of blends and roasts, as well as a rotating “Coffee of the Month.” I had the chance to try their August 2022 coffee of the month, which was this fully washed coffee from Mexico.
The coffee began with a strong fragrance of chocolate and almonds. The roast profile was a bit darker than expected for a medium roast and featured some strong roast characteristics paired with dark chocolate. I really enjoyed the big, smooth and rounded mouthfeel though and every sip sat heavy in my mouth. The coffee had a nice chocolate-toned sweetness and was quite clean and well-balanced. It lacked some complexity and didn’t have too much evolution through each sip with dark chocolate being the prominent note throughout. I tried it in a variety of brew methods and it worked quite well as a cream carrier for cappuccinos and lattes.
The Bottom Line
This and the other Fabula coffees I tried were a bit dark for my preference and a bit darker than what I think many specialty coffee drinkers would expect. That said, if you enjoy slightly darker roasts, prioritize organic coffees or enjoy adding a bit of cream to your coffee, this and any of the Fabula coffees are a great option.
