Ever since trying my first Timor Leste coffee from Assembly Coffee (one of my favorite coffees of the year so far) back in May, I’ve been excited to try another. I was quite excited when Yonder Coffee lined up Flight Coffee and their Timor Leste offering for their July roaster. Flight Coffee is actually behind the Timor Leste project that Assembly sourced their Timor Leste coffee from, so I knew it would be on par with the Assembly option from earlier in the year.

The coffee begins with an incredibly sweet fragrance full of strong blueberry, raspberry and honey notes. In the flavor the sweet berry notes carried through, as well as more subtle citrus notes. There was a fairly strong acidity that bursted through in the second half of the sip. The sweetness was undoubtedly my favorite part of the coffee. It was present from the fragrance through the flavor and into the finish. The berry notes dominated, but it also had a marshmallow quality to it that was quite fun to explore.

The Bottom Line

Parami was not only a delicious coffee, it was also a lot of fun to explore. It took more common flavor attributes and presented them in a unique way. It was a coffee that I think anyone could enjoy, but also left a lot of room for exploration for the more subtle attributes.
