I love Ethiopian coffees because they span such a wide variety of profiles—from intense berry and fruit-forward to incredibly floral, from light and tea-like to thick and syrupy. This Ethiopia Sasaba from Proud Mary was a lovely mix of various flavor profiles and created a delicate, yet complex coffee I really enjoyed.
The coffee began with a complex fragrance that reminded me of berries, honeysuckle, vanilla, and honey. It was delicate but carried a lot of depth and complexity to it. The flavor was layered with notes that reminded me of chocolate, sweet orange, subtle berries, and honeysuckle. It was quite lovely and had a light body and delicate fruit & floral sweetness. The finish featured more of the lingering sweetness. I really enjoyed this Ethiopian in various pour over brew methods, which is where I think it shone the brightest.
The Bottom Line
Every Ethiopian coffee is unique and this one from Proud Mary was a wonderfully unique pairing of fruit and floral notes in a delicate and complex pairing.
