Creature Coffee is a funky, fun roaster based in Texas with coffees named Moon Fruits, Jazzy Gooj and this one, Jaguar Sun. This was a single-origin honey-processed coffee from Costa Rica with the promise of zingy limes, honey-dipped raspberries, and a sneak of milk chocolate as its flavor notes.
The coffee began with a bright citrus and fruit-forward fragrance and had a flavor that reminded me of key limes, berries and chocolate. It had a wonderful floral undertone and a strong acidity that was almost sharp at first, but leveled off quite nicely as the coffee cooled. The body was an interesting mix of light, but also a somewhat thick mouthfeel. There was an excellent layering of flavors that gave the coffee some excellent complexity, but it was still very approachable. The coffee featured a decadent, floral sweetness and a finish that reminded me of dry white wine and ended fairly quickly.
The Bottom Line
The funky fresh branding of Creature Coffee started off the experience well, but it was a complex, yet approachable and delicious Costa Rican coffee that sealed the deal for me. Looking forward to what other coffees Creature puts out in the coming months—and the crazy names they come up with.
