Just Coffee Cooperative is a worker-owned roaster based out of Madison, Wisconsin. I always love when a roaster has a good story and mission behind it and Just Coffee has just that. Their origin story is inspiring and it’s led to a company that supports small farmers and roasts 100% fair trade and certified organic coffee. I had the opportunity to try some of their coffee recently, which ranged from this light roasted Honey Honduras to their medium roasted El Corazon blend to their super dark Maya Super Dark (which may have just been the darkest roasted coffee I’ve ever tried)! Each coffee was incredibly unique and delicious, but this honey-processed Honduran coffee was my clear favorite.
The coffee begins with a medium intensity, sweet aroma of chocolate and berries. In the flavor I tasted dark chocolate mixed with a delicious honey sweetness. I couldn’t identify the blackberry notes as strongly, though there were some more subtle berry undertones. The flavor was deeply rich and carried with it a lush body. The coffee was well-balanced with a medium brightness. The honey sweetness lingered a bit, but the finish was generally fairly short.
The Bottom Line
Honey-processed coffees when done well carry with them a rich, complex sweetness and this Honey Honduras from Just Coffee Co does just that. It is a solid coffee that is easy to drink and fun to explore. I wish I could have identified the blackberry notes a bit more, but overall was impressed with the coffee.
