Pros
Springbok is a small batch coffee roaster based in downtown Charleston, South Carolina. I recently had the opportunity to try a few of their coffees and really enjoyed this naturally processed Costa Rican.
The coffee started with a sweet fruit fragrance that reminded me of cherries and blackberries with subtle floral undertones. The flavor was fantastic with notes of sweet chocolate, subtle berries and cherry jelly beans. The very sweet profile and syrupy fruit-forward sweetness really did remind me of chewy cherry candy. The mouthfeel was thick and syrupy with a fairly strong acidity throughout. The finish lingered with a “weight” that stayed on your tongue after every sip. I enjoyed the coffee in a variety of brew methods, but thought it played particularly well with the AeroPress, which accented the syrupy body even more.
The Bottom Line
Finca El Jocote featured some of my favorite attributes in a coffee: it was sweet, syrupy and had some wonderful complexity with nice layers and depth to its flavor. It has definitely been a coffee I’ve enjoyed to brew.
