With all the crazy anaerobic coffees available now, a washed Ethiopian coffee has become one of my favorites to enjoy. The bright complexity of a good Ethiopian is so classic and hard to beat. That’s why I was so excited to find this Yirgacheffe Adado from Virginia-based roaster Merge Coffee Company. This coffee recently received a 94 rating from CoffeeReview, so I was incredibly excited to give it a try.
The coffee began with a complex fragrance that was light & tea-link and full of citrus, florals, and apricot notes. The flavor profile reminded me of black tea, almond, citrus, floral and dried fruit. It was incredibly complex with many layers to it. As the coffee cooled, the profile became less tea-like & fruity and evolved to be a bit more rustic and oaky. It reminded me of some of the exciting Yemenite coffees I’ve had in the past and was a fun surprise I enjoyed a lot. The body was very structured, but also delicate and tea-like. The coffee had a juicy, bright acidity and a long, sweet finish.
The Bottom Line
This Ethiopian coffee met and exceeded my expectations for it. It’s a mix of a classic profile paired with some wonderful complexity and would be a coffee I’d happily drink every morning.
