Hi-Top is a roaster based out of Fresno, California with a fun brand and some really beautiful, eco-friendly, recyclable tins that seem simultaneously retro and innovative. I recently tried a selection of their coffees and was really impressed by the quality of the beans and roasts. This naturally processed Yellow Bourbon though especially stood out as a special one to me.
The coffee began with a sweet citrus fragrance and moved into a sweet-tart flavor with notes of grapefruit and pineapple. It also had subtle tropical and caramel notes making it fairly wild with a complex profile. It had a silky smooth mouthfeel and a crisp, staccato acidity. The sweetness was quite special with a pronounced tart sweetness that reminded me of lemon drops.
The Bottom Line
El Salvador is an origin that has recently really impressed me and this Yellow Bourbon produced by Anny Ruth Pimentel and roasted by Hi-Top Coffee has been among the best.
