Hacienda Sonora is located in the Central Valley of Costa Rica and is the origin of this honey-processed coffee from California-based roaster Avatar.
The coffee began with a fragrance that reminded me of raspberry, vanilla cream, and orangsicles. The flavor was rich & sweet with notes of rich chocolate, raspberries, and vanilla cream. As the coffee cooled, it became sweeter and the fruit notes became more nuanced. The acidity was steady and present, but not too pronounced. The mouthfeel was luscious, thick, and aligned with many Costa Rican coffees I’ve had over the last year. The sweetness was really where this coffee shined in my opinion. It had a strong berry sweetness that crescendoed throughout each sip and lingered long into the finish.
The Bottom Line
This naturally processed bourbon coffee from Hacienda Sonora was a pleasure to drink. It had a great depth of flavor, a syrupy mouthfeel, and a wonderfully complex and evolving sweetness.
