This Colombia Magia del Campo is another coffee from the small-batch selection of offerings Bellwether Coffee offers. I featured a washed Kenyan a few weeks back and today am featuring a washed Colombian from the Tolima region. Like the Kenyan (and all their offerings), Bellwether roasted this coffee on their own electric, ventless coffee roaster. The end result is a delicious bright, yet balanced coffee.
The coffee begins with more muted aromatics that open up as you begin to brew it. The coffee has a fairly full marshmallow body and is heavy in the mouth. The sweetness is full of honey notes and a bright, lemon citrus acidity cuts through the entire sip. The coffee is wonderfully balanced, but has enough punch from the acidity to keep it interesting and exciting. I brewed the coffee as an AeroPress, espresso, pour over, and even cold brew and was consistently impressed with the results. The finish features more of the lingering acidity with a subtle sparkle left after every sip.
The Bottom Line
Overall this washed Colombian was a real winner for me. It was approachable and balanced enough to appeal to a wide audience of coffee lovers, while still having enough acidity to keep it exciting. I’m excited to try more of the offerings Bellwether has available in the months to come.
