Recipe Steps

  1. Close the Switch before brewing.
  2. Add 60g of water to bloom the coffee. Gently swirl or stir grounds to break up any clumps.
  3. At 0:45, open the Switch and immediately begin to slow pour an additional 100g onto the grounds.
  4. At 1:45, over the next 30-45 seconds add the remaining 120g of water slowly in a circular pour.
  5. Pour over should be complete by 3:30.
