Recipe Steps

  1. At 00:00, add 45g of 190° F (88° C) water. Bloom for for 45 seconds (adjust for resting).
  2. At 00:45, pour 75g of 203° F (95° C) water (120g total) with minimal agitation.
  3. At 01:45, pour an additional 50g of water (170g total) with minimal agitation.
  4. At 02:15, pour an additional 60g of water (230g total) with minimal agitation. Give the brewer a little tap to level the bed of grounds.

This brew method’s goal is to create a cup with a deep sweetness as it’s hot that develops very interestingly as it cools down. What is great about this coffee is its many layers, from its sweetness to its juicy acidity and then the more refreshing minty flavors.
