Recipe Steps

  1. Open the Switch and pour 50g of water.
  2. At 0:30, pour an additional 50g of water (100g total)
  3. At 1:15, close the Switch & add the remaining 140g of water using 190°F (88°C) water (240g total)
  4. At 2:00, open the Switch & allow to drain
  5. Pour over should be complete by 3:30
