Recipe Steps

  1. Bloom coffee with 50g of water and wait 45 seconds.
  2. At 0:45, add 100g of water in a circular motion. Pour from a higher point (4-5 inches above the brewer) (see note below).
  3. Once water level almost reaches the grounds, add another 100g of water in a circular motion pouring in the same way.
  4. Once water level almost reaches the grounds, add another 100g of water in a circular motion pouring in the same way to reach final water amount.

Notes:

  • For espresso, stick with around a 1:3.4 ratio.
  • Using a stronger ratio, a slightly coarser grind size, and intentionally pouring from a higher point (around 4-5 inches above the brewer) helps agitate/stir the coffee more and allows you to get a lot more sweetness from the coffee without over-extracting or getting astringency or bitterness.
