Recipe Steps
- Bloom coffee with 60g of water in a gradual, circular motion. Allow 30 seconds to draw down.
- At 0:30, pour 90g of water in a gradual, circular motion (total water weight: 150g). Allow water to almost fully draw down before next pour.
- At 1:15-1:30, pour final 105g of water in a gradual, circular motion(total water weight: 255g).
- Total brew time should be ~2:30.
Notes:
This particular coffee tastes at its best when brewed at a fast rate and slightly more diluted. Brewing this way highlights the fantastic syrupy texture, whilst balancing the fermented fruit characteristics.
Adjust the dose by .5g lower to exaggerate sweetness or increase by .5g for a punchier, more acidic result in the cup.
We would recommend against agitating the brewer, as this encourages choking.
