Recipe Steps

  1. Bloom coffee with 60g of water in a gradual, circular motion. Allow 30 seconds to draw down.
  2. At 0:30, pour 80g of water in a gradual, circular motion (total water weight: 140g). Allow water to almost fully draw down before next pour.
  3. At 1:15-1:30, pour final 100g of water in a gradual, circular motion(total water weight: 240g).
  4. Total brew time should be ~2:45.

Notes:

Brewing at a traditional 1:16 ratio with a ‘standard’ pace helps ensure the bold, blackcurrant acidity is balanced with the rich cacao and vanilla notes Kenyan coffees are known and loved for.

Adjust the dose by .5g lower to exaggerate sweetness or increase by .5g for a punchier, more acidic result in the cup.

We would recommend against agitating the brewer, as this encourages choking.
