Cold Brew Energy Balls

Ingredients
- 1 cup medjool dates
- 1 cup oats
- 1/2 cup walnuts
- 1/2 cup cashews
- 1/4 cup shredded coconut
- 1/4 cup concentrated cold brew coffee
- 1 tbsp cocoa powder
- 1 tbsp pure maple syrup
- pinch salt
Instructions
- Place the dates into a small bowl and cover with water. Let soak for approximately 30 minutes to soften slightly, then drain.
- In a food processor, add the dates, oats, walnuts, cashews, coconut, cold brew, cocoa powder, maple syrup, and pinch of salt. Pulse until well combined and the mixture resembles a dough, about 30 seconds.
- Line a baking sheet with parchment paper. Use your hands to roll the mixture into golf ball sized balls and place on the baking sheet. Let chill in the freezer for at least an hour before enjoying. Store in an airtight container in the freezer.
