Servings: 24 ounces
- 1 tsp avocado oil
- 1/2 cup onion finely chopped
- 1 tbsp minced garlic
- 1/3 cup whiskey
- 4 oz freshly pulled espresso shots
- 2 cups ketchup
- 2 tbsp tomato paste
- 3 tbsp Worcestershire
- 1/2 cup brown sugar
- 1 tbsp pure maple syrup
- 1/4 cup apple cider vinegar
- 2 tbsp dijon mustard
- 1 tsp salt
- 1 tsp paprika
- dash cayenne pepper or to taste
Heat a medium saucepan over medium heat and add the avocado oil. When the oil is hot, add the onion and saute it for about 3 minutes.
Add the minced garlic and saute one more minute. Add the whiskey and saute, stirring occasionally, for about 3 minutes.
Add the remaining ingredients and stir well to combine. Bring to a low boil, then reduce the heat to low.
Simmer the sauce for roughly 30 minutes, stirring occasionally, to allow the flavors to meld.
Transfer sauce to a heat-proof blender or use an immersion blender to blend until smooth. Allow to cool to room temperature before serving or chilling in the refrigerator.
