Recipe Steps

  1. Pour 50g of water over the coffee, in circles with a short center pour at the end and let the coffee bloom.
  2. At 0:30, do a second pour, like the first one, but this time 70g (120g total)
  3. At 1:00, do a third pour of 60g (180g total)
  4. At 1:30, do a fourth and last pour of 60g (240g total)
  5. Total brew time should be about 2:20 to 2:30, depending on your setup/pouring technique and water.

Notes:

  • Try to have some agitation in our pours to make the total brew time a little bit faster.
  • With a flat bottom filter you’ll bring out a bit more sweetness and clarity in the coffee, but conical filters will work too.
